Platinum Heavy Duty Range, gas, 32", 25-3/4" plancha, 1/2" thick plate, battery spark ignition, manual controls, (1) convection oven, includes (3) racks, stainless steel front, sides, rear, exterior bottom & 6" adjustable legs, 93,000 BTU, CSA, NSF
This 32" heavy-duty commercial gas range is a plancha and a convection oven in one. Designed to withstand the rigors of daily use, this commercial range has stainless steel construction on most components including the front, sides, rear, exterior bottom, and 6" legs, which can be adjusted to various heights to suit uneven floors.
The plancha measures 25.75" with the front two-thirds serving as a high-heat zone that can reach up to 800 degrees Fahrenheit. The rear one-third of the plate operates at lower temperatures perfect for finishing the newly seared food. The plancha is reinforced steel with a half-inch thickness. It is heated by cast-iron burners that can retain heat for longer periods for faster recovery and preheat. The rear and sides of the plate are fitted with splash guards to protect nearby surfaces and equipment from spills and splatters. Maintenance is a breeze thanks to the 3" wide collection tray on the sides that separates waste, the removable stainless steel grease drawer with higher capacity, and the raised plate that allows for easy access to the cooking surface.
The front is a 5" deep rail. The convection oven on this commercial range packs a 45,000 BTU burner with a standing pilot. There are three (3) racks so you can cook up large amounts of food at a time. With the two-speed fan, food on every rack is cooked uniformly. With the "insta-on" thermostat controls with a 175 to 550-degree Fahrenheit temperature range, you can set the specific temperature you want to bake in to get the desired results. The oven interior is porcelain enamel for easy cleaning.
The lining and burner box are fully insulated so the operation stays as efficiently as possible. The 5" stainless steel flue riser pulls the heat and smoke from the unit away from the user and towards the ventilation hood to keep the kitchen safe and cool.
