Southbend P36A-PPP Description
This 36" heavy-duty commercial gas range has a 29.25" plancha at the top and a convection oven at the base. With stainless steel construction on the front, sides, rear, exterior bottom, and 6" adjustable legs, this unit is a sturdy piece of equipment that can handle the rigors of daily use.
There are three (3) burners that deliver a total cooking power of 48,000 BTU each with a manual control knob. The front two-thirds plate of the plancha plate can get as high as 800 degrees Fahrenheit ideal for quickly searing meats and more. The other one-third is lower in temperature for finishing the seared dish. The plancha plate is made of reinforced steel with a half-inch thickness. There are cast-iron burners that hold heat well to speed up preheating and recovery in between uses. There is a 3" wide collection on the sides that allows you to separate waste to prepare for each cooking session. The front has a 5" deep rail while the rear and sides have splash guards that protect nearby equipment and surfaces from spills and splatters.
This convection oven is powered by a 45,000 BTU burner with a standing pilot. It comes with three (3) racks so you can cook multiple racks of food at a time. With the two-speed fan that moves hot air throughout the cooking chamber to reach every nook and cranny, food cooks uniformly no matter where it sits. The oven can cook at temperatures as low as 175 degrees Fahrenheit and as high as 550 degrees Fahrenheit. The thermostatic controls give you the ability to set the exact temperature for each cooking session to help you get the best results. The interior is porcelain enamel, which makes grime easier to spot and clean.
This commercial range has a fully insulated lining and burner box and a 5" high stainless steel flue riser that moves heat and smoke produced by the unit away from the user and towards the ventilation hood.
