Southbend P36A-CCC Description
If you need a charbroiler and a convection oven, this 36" heavy-duty commercial gas range provides both in one convenient unit. Engineered to weather the rigors of daily heavy use, this unit comes with stainless steel front, sides, rear, exterior bottom, and 6" adjustable legs that are impervious to rust and corrosion.
The charbroiler runs the width of the entire commercial range, powered by six (6) 16,000 BTU burners that are operated via three (3) high-low control knobs. It can cook meats and vegetables as high as 600 degrees Fahrenheit, with the signature charred and smokey quality. The stainless steel radiants evenly heat the cast-iron grates so you can utilize every inch of the space. There are grates that can be adjusted and removed to help you find the best setup for each recipe. With the cast iron construction, they can hold heat for longer periods to make recovery and preheat much shorter. The charbroiler has a removable drip tray for easy maintenance. The front of the cooktop is a 9.25" deep rail that offers additional table space.
The 45,000 BTU convection oven with a standing pilot and three (3) racks can bake products at temperatures between 175 degrees Fahrenheit and 550 degrees Fahrenheit. The thermostatic controls allow you to set up the specific cooking temperature required by each recipe so you can create the best possible cooking environment. Plus, with the dual-speed fan, you can be confident that everything inside bakes uniformly regardless of its position inside the porcelain enamel chamber.
The lining and burner box are fully insulated for an efficient operation. The 5" high stainless steel flue riser makes for a cool and safe kitchen by pulling the heat and smoke produced by the unit away from the user and towards the ventilation hood.
