If you’re looking for a mobile holding cabinet with both temperature and humidity control the MT-1826-18 Solid Door Mobile Heated Holding Cabinet from FWE is the way to go. The universal tray slides are designed to hold 18”x26” or 12”x20” pans and can have a maximum spacing of 4-½” and can be adjusted at 1-½” increments.

Depending on the food stored inside, users can adjust the humidity with a simple dial that ranges from moist to crisp. The temperature is graduated at 10-degree increments and can be adjusted between 90° and 190°F. The temperature is easy to monitor with the thermometer and the control panel is located at eye-level and recessed to stay out of the way. Temperature and moisture are controlled separately via two Incoloy nickel-chromium heating elements. Water to add moisture is held in a 12”x20” stainless steel water reservoir that’s easy to remove for cleaning. The warm, humid air is distributed evenly throughout the cabinet by a fan-cooled high-temperature blower motor.

The door is easy to open with a magnetic workflow door handle. The insulated stainless steel door locks the heat in thanks to a cabinet-mounted door gasket. 

For durability, the exterior of the cabinet is made from tough 20 gauge stainless steel with an easy to clean polished finish. The interior is made from 22 gauge stainless steel and features coved corners for convenience. Keeping the interior nice and warm without using to much power is easy thanks to the UG-26 high-density fiberglass insulation in the top, sides, bottom, and back of the cabinet. For portability, this cabinet features 5” maintenance-free polyurethane casters.
