Southbend P36A-BBC Description
This 36" heavy-duty commercial gas range has four (4) 35,000 BTU open burners, a 12" charbroiler, and a convection oven in one versatile cooking workhorse. Built to perform in challenging foodservice environments, this unit has stainless steel front, sides, rear, exterior bottom, and 6" legs, which are adjustable to fit uneven floors.
The open burners have a clog-free design that maintains proper gas flow and simplifies cleanups. Each one has a removable welded steel top grate that creates a flat surface to hold the pots and pans and make them less cumbersome to move around. This commercial range also lets you cook up meats and vegetables with that unique charred and smokey goodness. The charbroiler on this unit is powered by two (2) 16,000 BTU burners that can be operated with one high-low control knob. The cooking surface can reach temperatures as high as 600 degrees Fahrenheit. Stainless steel radiants heat the cast-iron grates evenly so you can use the entire space. These grates are adjustable and removable to adapt to the unique needs of each recipe. Plus, with their cast iron construction, they can retain heat longer so it doesn't take long to preheat and recover in between uses. The charbroiler comes with a removable drip tray for easy, time-saving maintenance. The front of the cooktop is a 9.25" deep rail.
If you want to quickly bake dishes and pasties, the convection oven with a 45,000 BTU burner with a standing pilot will get the job done. The oven can cook at temperatures between 175 degrees Fahrenheit to 550 degrees Fahrenheit. The thermostatic controls let you set the specific temperature you want to bake in, providing you tons of flexibility to accommodate various recipes. There are three (3) racks that you can position on five (5) side rails. Everything cooks uniformly, thanks to the two-speed blower that distributes the hot air throughout the cooking chamber. The interior is made of porcelain enamel for easy cleanups.
The lining and burner box are fully insulated for an efficient operation. The 5" high stainless steel flue riser helps maintain a safe and cool kitchen by diverting the heat and smoke coming from the unit away from the user and towards the ventilation hood.
