The Groen BPM-15GA Braising Pan is a great option as the primary large batch cooking equipment for small establishments or as an additional unit in medium to large establishments.  This Gas Tilting Skillet Braising Pan is the smallest in Groen’s line but still has the key features of the larger models. The 15-gallon cooking pan is 8” deep and can be used for more than just braising with its firing rate of 65,000 BTU/hr.

The cooking surface is made from a durable ⅝” thick stainless steel clad plate which resists distortion and warping. The pan’s surface has been polished to a 100 emery grit finish that prevents food from sticking to it and in turn, makes cleaning it much simpler.  Stirring food in the pan is made easy with the 3” radius corners. You can measure the amount of liquid in the pan with the graduated fill-level marks displayed in both gallons and liters.

The pan body is made from a solid one-piece welded, heavy duty piece of 304 stainless steel. It has a #3 finish which is easy to clean and maintains its looks year after year. This model comes with a faucet mounting bracket that can be installed on the left, right or rear.  The pan body sits on an open leg stand with height-adjustable bullet feet for use on uneven flooring.

The control panel is located on the right side of the pan body in an IPX6-rated stainless steel enclosure. It includes a power on-off switch with an indicator light, a knob for setting the temperature and time, an LED display for the set temperature or cook time, a heating indicator light, buttons for resetting the low and high temp presets, a manual mode button for setting the pan temperature with the knob, and a timer set button with an indicator light.

This braising pan has a temperature range of 175 to 425°F and is thermostatically controlled; when the high preset temperature is met it will automatically shut off and when the temperature drops below the low preset temperature it powers back on.  All Groen tilting braising pans come standard with a high limit thermostat for safety.

The Groen BPM-15GA  Braising Pan is a manual tilt model which is operated with a hand crank.  The worm-and-gear system is smooth and precise for absolute control when pouring the pan contents.  The pan body can tilt to full vertical in 24 turns of the hand crank and can be cranked past the vertical to make cleaning easier.

This model uses 5.0 amps at 115v/60/1-ph and requires a ½” NPT gas connection. Make sure to select either the LP gas or Natural gas option depending on what your establishment uses.
