To maintain the flavor and texture of certain dishes it’s important to hold them at the right temperature and humidity. The MT-1220-10 Solid Door Mobile Heated Holding Cabinet from FWE allows users to set both these parameters allowing food to be held for extended periods without affecting flavor and texture.  The removable fixed racks inside this heated cabinet feature spacing of 2-⅝” and can hold 12”x20”x2-½” pans.

Users can easily adjust the holding temperature between 90° and 190°F with a dial featuring 10-degree increments. The humidity is controlled by another dial that ranges from moist to crisp. The controls are at eye-level making them easy to monitor and recessed to keep them out of the way. Temperature and moisture are controlled separately via two Incoloy nickel-chromium heating elements. Water to add moisture is held in a 12”x20” stainless steel water reservoir that’s easy to remove for cleaning. The warm, humid air is distributed evenly throughout the cabinet by a fan-cooled high-temperature blower motor.

Accessing the interior is simple with the easy to grasp magnetic workflow handle. The insulated stainless steel door is sealed by a cabinet mounted door gasket.

20 Gauge stainless steel construction for the exterior makes sure this cabinet will last for several years in even the most grueling foodservice environments. The polished finish will maintain its appearance while being easy to wipe-down. For easy cleaning, the 22 gauge stainless steel interior features coved corners. Keeping the interior nice and warm without using too much power is easy thanks to the UG-26 high-density fiberglass insulation in the top, sides, bottom, and back of the cabinet. For portability, this cabinet features 5” maintenance-free polyurethane casters.

To ensure safety and sanitation this holding cabinet is listed by UL and classified by UL EPH. and passed CE and IPX4 certification.
