Blodgett CNVX-14G DBL Description
The Blodgett CNVX-14G DBL double-stacked gas convection oven is a high-performance piece of commercial cooking equipment that delivers an impressive 130,000 BTU from a single footprint. Each compartment comes standard with five (5) stainless steel wire shelves but is able to hold seven (7) full-size hotel pans or up to 14 full-size sheet pans. Available in natural gas and liquid propane configurations, this unit has a wide temperature range of 140 to 500 degrees Fahrenheit giving you all the flexibility you need to bake and roast a multitude of dishes including slow-cooked meats!
The fully welded stainless steel frame creates a sturdy, rust-resistant built that will last a long time, all of which supported by a floor stand with rack supports for added storage. The halogen-lit baking chamber is fully insulated with solid mineral fiber, which doesn’t sag and protects from heat loss.
There are a total of 13 rack positions so that the convection oven can accommodate products large and small. The four-speed bi-directional fan ensures that every rack is surrounded by hot air to produce an even bake. The removable 4" temperature core probe ensures accurate bake and adds a cook-and-hold capability that allows you to slow-cook meats overnight! The electronic spark ignition maintains accuracy and consistency while also generating additional fuel savings.
You can even program as many as 100 recipes in this commercial oven so you can produce signature items with less effort but with consistent quality. These recipes can be easily copied and transferred via a USB connection. This unit also allows you to introduce humidity at any time of the cooking cycle with the Hydroburst feature.
The doors swing all the way to 180 degrees so you can safely load and unload pans. They have adjustable door hinges and a two-step safety latch that adds extra safety. Each door has a dual-pane thermal glass window that keeps everything inside visible so you can check your progress at all times without interrupting the oven’s operation.
The coved corners of the cavity, the hinged pressure panel, and the hinged inner glass used in the windows allow you to clean the unit thoroughly, making the task even easier with the retractable hose reel with a front-water shut-off valve. The fixed drain at the bottom of the cavity and the condensate trough mounted on the doors catch liquid drippings and ultimately keep the surrounding area of the convection oven safe. The interface control panel is accessible from the front for easier servicing. The unit is supplied with five (5) chrome-plated racks and a pressure spray bottle for oven cleaning.
The Blodgett CNVX-14G DBL double-stacked gas convection oven comes with a one-year warranty on parts and labor and a free start-up inspection service. This model accepts a 120 voltage and 208-240 voltage with 60 Hz and a single-phase electrical connection. For customization options, check below.
