The Groen BPM-40EC Braising Pan is perfect for use in establishments catering to large batch cooking.  With its 40-gallon capacity, this electrically heated model is among the largest units of Groen's tilting braising pan product line.  Although it has a cavernous pan, the unit only takes up 48" from end to end and 39-3/4" from front to back.

The cooking pan itself is 10" deep, 28-1/4" deep and 35-3/4" wide and can easily cook tens of pounds of food at a time. With its 3" radius corners, stirring food is easy and natural. The inside of the corrosion resistant 304 stainless steel cooking pan is emery polished to 100 grit which keeps food from sticking while reducing cleaning times.

The cooking surface is a thick 5/8" stainless steel plate that resists warping. Electric flat bar heating elements ensure that everything is heated evenly without any hot or cold spots.  

The Groen BPM-40EC Braising Pan's control panel keeps things simple. It has a power switch with a built-in indicator light, a heating indicator light, and a temperature control knob. The control panel is IPX6-rated and securely mounted to a stainless steel housing.

The cooking temperature is thermostatically controlled and the unit will automatically turn the heat on or off based on the temperatures you set.  This braising pan has a temperature range of 175 to 400°F. All Groen tilting braising pans come with a high limit thermostat for the safety of everyone in the kitchen.

The exterior surface of the braising pan has a #3 finish which not only looks great but is also very easy to clean. This ensures that the unit will continue to look good even after years of heavy use. The Groen BPM-40EC Braising Pan is mounted on a round tubular open leg stand, which makes accessing below and around the unit very simple.  Included with this unit is a bracket for mounting a faucet on the right, left or rear right of the device. Faucet not included.

Pouring is precise and easily controlled with a hand crank. 24 turns will bring the pan to its full vertical position, it can also be cranked past full vertical for ease of cleaning.

Make sure to select the correct voltage and phase configuration for your kitchen since this model comes in the following configurations:  480v/60/3-ph (19.0 amps), 208v/60/1-ph (74.0 amps), 240v/60/3-ph (37.0 amps), 208v/60/3-ph (43.0 amps), and 240v/60/1-ph (64.0 amps).
