The Groen BPM-40EA Braising Pan is the largest electrically heated floor standing braising pan in their product line. With a 40-gallon capacity, this braising pan is designed for cooking huge amounts of food. How huge? Well, cooking 20 pounds of vegetables is child’s play for this braising pan. Although this unit is all about large batch cooking, it takes up as little space as possible, 48” wide and 39-¾” from front to back. If you need to make a super jumbo batch of jambalaya or a boatload of beef stew, this braising pan should be at the top of your list.

The stainless steel interior of the cooking pan is emery polished to a 100 grit finish that prevents food from sticking which also means less time cleaning.  The 10” deep siding is marked with graduations in both liters and gallons, making it easy to measure the contents at a glance. The pan is 35-¾” wide and 28-¼” from front to back and the body is made from a single piece of extremely corrosion resistant 304 stainless steel.  The corners of the pan have a 3” radius which makes moving food around a lot easier, plus the lack of tight corners leaves gunk no place to hide when cleaning. The cooking surface is evenly heated by flat bar electric heating elements and a ⅝” thick distortion resistant heavy plate clad in stainless steel.

The Groen BPM-40EA Braising Pan has an advanced control panel, not only does it have temperature control, but it also has a built-in timer.  This is great for a large busy kitchen, with the temperature and time dialed in it’s nearly impossible to overcook a large batch of food. The control panel is mounted on an IPX6-rated stainless steel housing and includes: a power switch with a built-in indicator light, a knob for dialing in the temperature and time, an LED readout of the temperature or cook time, a light indicator for heat, buttons to set the high and low temperature presets, a manual mode that lets you precisely set the temperature, and a button to set the 1 minute to 10 hour timer with an indicator light.

You don’t need to worry about overcooking or burning food in the Groen BPM-40EA, the precise temperature controls are thermostatically regulated and heating automatically turns off when the preset high temperature is reached and turns back on when the minimum temperature preset is hit.  For the safety of everyone in the kitchen all Groen tilting braising pans come standard with a high limit thermostat.

Tilting the pan is simple, intuitive, and precise with the hand crank, it only takes 24 turns to tilt the pan to full vertical. For cleaning it is possible to tilt it past full vertical.  The worm-and-gear mechanism makes tilting smooth and hassle-free.

The exterior of the Groen BPM-40EA has a #3 finish which minimizes cleaning time and maximizes the aesthetics of the unit over its lifetime. The unit sits on an open leg tubular stand which makes spotting and cleaning any spills under and around it easy. All 4 legs have adjustable bullet feet that keep the unit level on uneven flooring. For your convenience, a faucet can be easily mounted on the left right or rear right of the unit with the included bracket. Faucet is optional.
