To maintain the flavor and texture of certain dishes it’s important to hold them at the right temperature and humidity. The MTU-10 Solid Door Mobile Heated Holding Cabinet from FWE allows users to set both these parameters allowing food to be held for extended periods without affecting flavor and texture. The universal tray slides are designed to hold 18”x26” or 12”x20” pans and can have a maximum spacing of 4-½” which can be adjusted at 1-½” increments.

The temperature and humidity are electronically controlled with two dials. The thermostat dial has 10-degree increments to set the temperature between 90° and 190°F. The moisture dial ranges from moist to crisp. The temperature is easy to monitor since the controls are front-mounted at eye-level and stay out of the way with a recessed design. Each cavity features two separate Incoloy nickel-chromium heating elements for the temperature and humidity controls. Air is distributed throughout the cabinet by a high-temperature fan-cooled blower motor. To add moisture, water is held in a 12”x20” stainless steel water reservoir that is easy to remove for cleaning.

For ease of use, while providing a low profile design, the door is easy to open with a magnetic workflow door handle. The stainless steel door is insulated to prevent heat loss and an airtight seal is provided by the cabinet-mounted gasket.

20 Gauge stainless steel construction for the exterior makes sure this cabinet will last for several years in even the most grueling foodservice environments. The polished finish will maintain its appearance while being easy to wipe-down. For easy cleaning, the 22 gauge stainless steel interior features coved corners. To keep the interior nice and warm without needing to use too much power, this cabinet features UG-26 high-density fiberglass insulation. This cabinet is equipped with 5” heavy-duty polyurethane casters that make it easy to move into place.
