When you need to control both the temperature and humidity that food is held at in an easy to move package, the FWE MT-1220-45 Solid Door Mobile Heated Holding Cabinet is an easy pick that provides users with plenty of flexibility. The fixed racks are removable and are designed to hold 12”x20” pans with a spacing of 2-⅝”.

For precise control over the temperature and humidity, the electronic controls feature two dials. The temperature control dial has 10-degree increments for setting the temperature from 90° to 190°F while a second dial allows users to set the moisture from moist to crisp. The controls are front-mounted at eye-level for easy access and recessed to keep them out of the way. Each cavity features two separate Incoloy nickel-chromium heating elements for the temperature and humidity controls. Air is distributed throughout the cabinet by a high-temperature fan-cooled blower motor. To add moisture, water is held in a 12”x20” stainless steel water reservoir that is easy to remove for cleaning.

Accessing the interior is simple with the easy to grasp magnetic workflow handles. The stainless steel doors are insulated to prevent heat loss while airtight seals are provided by the cabinet-mounted gaskets.

The durable 20 gauge stainless steel exterior is made to stand up to serious commercial use and features a polished finish for easy maintenance. The interior is made from 22 gauge stainless steel with coved corners to make cleaning easy. To keep the interior nice and warm without needing to use too much power, this cabinet features UG-26 high-density fiberglass insulation. Rolling this holding cabinet into place is simple with 5” polyurethane casters that are maintenance-free.

To make sure this holding cabinet is up to the task of commercial use, it features CE and IPX4 certification as well as UL listing and UL EPH classification for safety and sanitation.
