Packing three powerful pieces of equipment in a single package, the Blodgett BC-2E full-size roll-in electric combi Commercial Oven is designed to improve the efficiency of any commercial kitchen. With 215,000 BTU of power, this model can accommodate 14 full-size sheet pans that measure 18 by 26" or up to 28 full-size hotel pans with 12 by 20" dimensions. The stainless steel construction runs from the top to the door to the sides and the back while the inside has a fully welded stainless steel frame, offering long-lasting durability and protection from rust and damage. Since this unit has a roll-in configuration, products are handled less for improved speed and hygiene.
Out of the box, you get 10 wire shelves that you can fully maximize, thanks to the two-speed fan that moves the steam and hot air throughout the cooking chamber so that every part gets uniform heating. A self-contained steam generator installed outside of the cooking chamber produces the steam and then flushes it out to help the oven recover faster. The unit also features a factory-installed water pressure regulator and vented drain assembly.
With the manual selection switch, this electric combi oven can function as a steamer and convection oven, but can also combine both to seal in flavors and nutrients to create delectable, vibrant, and healthy dishes with improved yield and shorter cooking times. The manual controls also allow you to switch to other cooking modes including steam-on-demand, and the pre-set Vario Steam. To create the ideal cooking atmosphere for your recipes, the solid-state thermostat lets you adjust the temperature from 15 degrees to 500 degrees Fahrenheit. Steam regulation and temperature control can also be automated for easier operation.
Getting multiple orders during rush hours? You can cook them all up in the combi oven without worry about flavor transfer, all thanks to the open vented system that gets rid of the steam and any byproducts produced during the cooking session. To keep you on track, the motor-driven timer allows you to set a countdown of up to 120 minutes.
The door features a dual-pane glass window that keeps the interior visible at all times. It has a magnetic door interlock switch that powers off when it is opened. The door gasket minimizes heat loss and is removable so it can be cleaned and maintained easily. The oven ships with a durable TC-14 transport cart that can accommodate 28 steam table pans or 14 bake pans for extra storage.
The important process of deliming is made easier to keep the oven running at its best. An indicator light lets you know if delining is required. This unit comes with a pressure spray bottle, a hose and a spray assembly for rinsing a deliming container, and an internal semi-automatic deliming pump to help you effectively remove scale and lime build-up to keep the unit running as it should.
The Blodgett BC-20G full-size gas combi oven meets cETLus and NSF standards and includes a one-year warranty on parts and labor. This model comes standard with a 120v with 60Hz and single-phase connection although 208/240v is also accepted.
