This griddle has 717 sq. in. of cooking space and as long as food will fit, every square inch can be used for cooking. This is possible because the recovery of any spot on the griddle is roughly 10 seconds, no matter the load. How is this possible? AccuTemp’s Accu-Steam™ system uses a hermetically sealed vacuum chamber containing pure water that never needs refilling. Heating elements inside the vacuum chamber heat the water to produce steam, and the steam transfers heat to the 7 gauge stainless steel griddle plate. Since steam is making contact with the entire griddle plate, everything is heated equally. Steam is attracted to anything colder than itself, so any cold spots that are recovering are automatically heated to match the entire griddle plate.

The temperature of the griddle can be set from 200°F to 400°F with the digital thermostat control and the entire surface only has ±5°F of temperature variation. 3 temperature presets can be configured, and if you don’t want anyone fiddling around with the temperature, a manager mode can be used to lock out any changes.
