If you are looking for a versatile, space-saving oven that can handle all your steaming and convection baking needs, the BLCT-6-10E mini-size boilerless electric combi oven and steamer is a stellar addition to your kitchen. This offers double the functionality with a BLCT-6E model stacked on the BLCT-10-E to create a mega-combi station in a small space in your kitchen. The boilerless design saves you tons on water expenses and creates steam through an injection steam system that’s done directly into the heating elements. The stainless steel construction ensures is vulnerable to rust, corrosion, and scratches, maintaining durability while facilitating easy cleaning.
The top oven is able to accommodate four full-size hotel pans (12" by 20") while the bottom oven has a larger cavity with six full-size hotel pans. These Commercial Ovens have a combined number of racks amounting to eight, and each one has a reversible nine-speed fan that makes sure each rack gets equal heat and steam to cook evenly. An internal core temperature probe with multiple measuring points ensures that the food is cooked perfectly. The unit also allows cooling manually and automatically as well as automatic humidity pulsing.
Each chamber in this stack has a dedicated touchscreen panel from where you can basically do every conceivable combi cooking task. You can access and launch multiple cooking modes there including additional modes for unique needs such as rethermalizing, low-temp steaming, forced steaming, proofing, and preheating. This user-friendly screen also lets you program as many as 500 recipes all with up to 15 steps each. If you need to adjust the settings manually, the touchscreen panel makes it easy. You can even document HACCP data with these ovens, which you can transfer along with the recipes via the USB ports.
You can check your progress without having to open the door, thanks to the dual-pane tempered glass window and halogen light. When you do have to open the door, the handle is cool to the touch for safety and activates a two-step safety mechanism that turns off the fan first. Both ovens come standard with a left-hinged door but can be reversed using a separate conversion kit to fit your specific layout.
Cleaning is effortless, thanks to the Automated CombiWash feature designed to use small amounts of water and detergent while getting the job done, all without contact with chemicals too. There is a convenient detachable hand shower for cleaning the oven floors or filling pots. There is a fixed drain at the bottom of the center cavity as well as a door-mounted drip tray to collect liquid.
This Blodgett BLCT-6-10E mini-size electric combi steamer meets all cETLus, ETL-Sanitation, and CE standards for health and safety and comes with a one-year warranty on parts and labor.
