Proofer/Heated Holding Cabinet, mobile, full height, split cavity, insulated, (5) pair adjustable tray slides 4-1/2" OC each compartment, (5) 18" x 26" or (5) 12" x 20" pan capacity each compartment, (2) field reversible doors with recessed antimicrobial handles, built-in humidifier, individual controls for temperature & moisture, optional range thermometer, removable water reservoir, recessed hand grip on each side of unit, stainless steel interior & exterior, 5" casters (2) rigid & (2) swivel with brakes, UL, cUL, NSF
