Blodgett BLCT-10E-H Description
The Blodgett BLCT-10E-H boilerless combi steamer is a powerful piece of equipment that can steam, bake with convection heat, and combine both functionalities to shorten cooking times, increase yield, and produce healthy meals with their original qualities sealed in. This unit does not require a fire suppression system or filter and instead has an integrated Hoodini hood that removes all the smoke, fumes, and steam heat from your kitchen using a catalytic and condensing system to keep your workplace comfortable, sanitary, and clean. The unit can fit as many as six to 10 full-size 12 by 20-inch hotel pans that are 2 to 2 inches in height.
Since it is boilerless, you will also see amazing savings on water expenses! It doesn't rely on a water tank to generate steam, and instead directly introduces water into the heating elements. Plus, with the 430 stainless steel construction on the top, back, and sides, and 304 stainless steel bottom, door, and interior this combi oven is built to last a long time even with minimal scrubbing, giving you incredible value for money!
Imagine cooking a wide range of offerings from a single piece of equipment at just the push of a button. The touchscreen panel allows you to operate the unit. Apart from steam and convection heat, you can also use the unit for proofing, preheating, low-temp steaming, and forced steaming in addition to the special CombiSmart cooking mode preset by Blodgett. For better control, the combi oven also allows manual and automatic cooling and automatic humidity pulsing. The combi oven can also store 500 recipes with 15 steps each, so you can cook up your daily offerings at just a push of a button, reducing time and labor to create dishes with consistent quality. The unit can even document HACCP data that can be transferred via the USB port.
This commercial oven features a two-piece rack system that can be individually timed to suit each recipe and a halogen-lit interior for superior visibility. It has a dual-pane tempered glass window that serves as a beautiful viewing area, making it a great addition to the front-of-house. The glass is heat-reflecting to help with insulation and is hinged so it can be cleaned very easily.
To achieve faster and even cooking from every rack position, a reversible nine-speed fan distributes the steam and heat uniformly across the cooking chamber. An internal core temperature probe keeps the temperature of the food in check from multiple points to ensure that it is cooking properly.
You can even load up to 500 recipes on this unit, all with 15 steps each, so you can easily choose one when cooking your popular menu items. Additionally, this combi oven can collect relevant HACCP data that can be easily transferred along with the recipes via the USB port.
This unit can also be cleaned via the Automatic CombiWash feature, which is designed to perform thorough cleaning with an adequate amount of water and detergent and with no chemical contact. A detachable hand shower can be used to clean the oven floors or fill pots with water.
The stainless steel door is field-reversible using a conversion kit and is equipped with a safety system that powers down the fan first before fully opening. To ensure a safe and dry work area, the oven comes with a 2" drain and a drip tray.
The Blodgett BLCT-10E-H full-size electric combi oven and steamer meets cETL, ETL, and CE standards and comes with a one-year warranty on parts and labor. The unit accepts 208v, 230, 240v, 400v, 415v, and 440v with a 60Hz three-phase connection, but 480v is also available.
