The Electrolux Professional 587028 (PUET17GCWU) Touchline Tilting Pressure Braising Pan is a 45-gallon model powered by gas and rated with a maximum output of 98,948 BTU/hr. This unit is designed to meet the needs of large kitchens that cater to extensive seating and require large amounts of food to be cooked as quickly and efficiently as possible.
Most braising pans are capable of simmering, roasting, frying, and boiling making these devices the do-it-all piece of equipment in a kitchen which produces food in large batches. This 45-gallon braising pan has the added ability of pressure cooking which can drastically lower cooking times.
Operating the Electrolux Professional 587028 (PUET17GCWU) Touchline Tilting Pressure Braising Pan is just like using a modern smartphone. The TOUCH control panel has a simple to understand icon-based graphical user interface which guides operators through the cooking process step-by-step. Important information like the set temperature, actual temperature, and cook time remaining is clearly visible on the large screen. Additional recipes and updates are easily installed onto the device through its USB port and HACCP data is easily retrieved. The soft control setting allows the unit apply heat to more delicate food in a gentle fashion.
When everyone’s already clocked out and gone home this unit can continue cooking. Overnight cooking food to cook slowly and efficiently making a large batch of food ready to serve the next day.
The lid is held securely for pressurized cooking by a safety mechanism that prevents it from being opened while the unit is pressurized. Using the pressure function allows the unit to automatically maintain the proper 6.5 PSI cooking pressure which drastically reduces cooking times.
The motorized tilt control on this braising pan is smooth and precise. Its SOFT STOP tilting mechanism provides users with complete control over their pouring speed to eliminate splashing and product loss.
