To effectively chill food, the blast chilling cycle reduces the internal temperature from 160°F to 38°F in 90 minutes, and the shock freezing cycle reduces the temperature from 160°F to 0°F in 4 hours. Depending on the model, they have a freezing capacity of up to 1380 lbs and a chilling capacity of up to 1590 lbs.
